Lentil Soup
from “Joy of Cooking”
ingredients
- 3 tsp olive oil
- 3 medium carrots, peeled and diced
- 3 medium celery stalks, diced
- 1 large onion. diced
- 3 garlic cloves, minced
- 4 slices bacon (or 2 oz pancetta), diced
- 2 cups dried lentils, rinsed
- 1 can diced tomatoes, 14 oz
- 1 tsp dried thyme
- 8 cups water/chicken broth
- 1 1/2 tsp balsamic vinegar
- 2 tsp salt
- 1 tsp pepper

Heat oil on medium-low.

Cook bacon and remove.

Add vegetables and cook 8-10 minutes until tender but not browned.

Stir in bacon and dried, rinsed lentils.

Add tomatoes, thyme, and water/chicken broth.

Bring to a boil and reduce heat.

Simmer until lentils are tender, 30-45 minutes.

Stir in balsamic vinegar, salt, and pepper.
