Mom's Famous Frittata
ingredients
- 1 chopped yellow onion
- chopped garlic (just a little bit)
- 4 cups sliced zucchini (maybe 6 zucchini) or you can use frozen chopped artichokes, spinach, or just about any type of fresh vegetable
- 1 or 2 pkgs of fresh sliced mushrooms (optional)
- 1/2 cup olive oil
- 1 - 1 1/2 cups breadcrumbs
- 6 beaten eggs
- Parsley
- Salt & Pepper
- 1/2 - 1 cup grated cheese

Baked:

1. Mix dry ingredients first. Add other items with zucchini last. Place in an olive oil coated pyrex dish. Bake at 325 degrees for 40 minutes or until brown... when cool cut into squares.

Stovetop:

1. In fry pan saute onion, zucchini, vegetables, garlic in olive oil. In large mixing bowl put in eggs and whisk, add seasonings (salt, pepper, & parsley).

When finished saute add those ingredients to the mixing bowl and mix with fork. Add grated cheese and mix. Then add breadcrumbs as needed to make desired consistency (not liquidy); mix all together until blended.

2. In a small fry/saute pan drizzle olive oil to coat bottom or PAM with a touch of olive oil. Heat and pour the bowl mixture into the fry pan. Cool on low heat and while cooking take a flat spatula and go around the outside rim pulling mixture away slightly from wall of pan. This should cook about 10 min. or until it looks set. Then if you are using the frittata pans they now sell you just flip the covered pan over and cook another 10 min. or if you are using only one pan you will need to take a flat plate that covers the size fry pan you are using and put the plate on top of the pan and while holding the plate down on top of the fry pan and the fry pan in the other hand flip the frittata out of the pan onto the plate. then, you will need to make sure the pan still has a bit of olive oil on the bottom of it and slide the frittata onto the heated fry pan and cook an additional 10 min. or until done.... BE CAREFUL when flipping the frittata out of the pan onto the plate as it is very hot and there may be some oil drips.
