Lemon-Herb Rice
ingredients
- 1 c. uncooked long-grain rice
- 1 T. olive oil
- 1 small onion, finely chopped
- 1 T. minced garlic
- 1 (14 oz) can chicken broth
- 1 1/2 T. fresh lemon juice
- 3 green onions, sliced
- 2 tsp. chopped fresh basil
- 1 tsp. grated lemon rind
- 1/2 tsp. salt
- 1/4 tsp. pepper

Sauté rice in hot oil in a large saucepan over medium heat 2 minutes. Add onion and garlic; sauté 3 minutes. Stir in broth and lemon juice; bring to a boil. Cover, reduce heat, and simmer 10-12 minutes or until rice is tender.

Remove from heat; stir in green onions and remaining ingredients. Cover and let stand 5 minutes.
