Beef Stoganoff
This is a great dish for a buffet or dinner party. You can prepare it almost completely ahead of time.
ingredients
- 2 lbs. tenderloin or sirloin
- 4 tbs. butter or margarine
- 1/2 lb. mushrooms, sliced
- 1 c. sliced onion (1 large)
- 1 can (10 1/2 oz.) condensed beef broth
- 1/2 c. dry white wine or water
- 1/4 tsp. salt
- Dash of pepper
- 1 1/2 c. dairy sour cream
- 1 tbs. chopped parsley
- 1 tbs. minced chives
- Hot, cooked rice

Slice meat into 1/2-inch slices; cut slices into 1/2-inch strips. heat butter or margarine in large skillet. Brown meat well on all sides; remove; reserve.

Saute mushrooms and onion until tender in fat remaining in skillet. Add meat, beef broth, wine or water, salt and pepper. Cover; simmer 10 minutes.

**Stroganoff may be cooked to this stage and reheated.

Stire in sour cream; heat just to boiling, stirring constantly. Sprinkle wiht parsley and chives.

Serve with cooked rice.
