Prevention Bran Muffins
healthy bran muffins
ingredients
- 2 c. rice bran (Linda substitutes oat bran)
- 2 c. quick-cooking oats
- 2 t. baking powder
- 1/2 t. salt
- 1/2 c. brown sugar (I am a little more generous)
- 1 c. nonfat yogurt
- 3/4 c. unsweetened applesauce plus 1/4 c. water (1 c. apple juice)
- 1 T. canola oil
- 3 egg whites (I sometimes use 2 eggs)
- 1 t. vanilla
- Grated zest of one orange (I omit)
- 1 1/2 c. blueberries (I substitute raisins)
- Topping:
- 2 T. granulated sugar
- 1 t. cinnamon

Preheat oven to 400.

Line muffin tins with cupcake papers

In large bowl mix dry ingredients (except topping)

In another bowl blend yogurt, applesauce, oil, eggs, and vanilla

Combine liquid ingredients with dry ingredients. Mix thoroughly but do not beat.

Stir in blueberries (or raisins)

Fill tins 3/4 full. Sprinkle topping over each.

Bake 20-25 minutes (20 min.) or until toothpick comes clean. Do not overcook – they dry out quickly. They freeze well for months.
