Prevention Bran Muffins

healthy bran muffins

ingredients

  • 2 c. rice bran (Linda substitutes oat bran)
  • 2 c. quick-cooking oats
  • 2 t. baking powder
  • 1/2 t. salt
  • 1/2 c. brown sugar (I am a little more generous)
  • 1 c. nonfat yogurt
  • 3/4 c. unsweetened applesauce plus 1/4 c. water (1 c. apple juice)
  • 1 T. canola oil
  • 3 egg whites (I sometimes use 2 eggs)
  • 1 t. vanilla
  • Grated zest of one orange (I omit)
  • 1 1/2 c. blueberries (I substitute raisins)
  • Topping:
  • 2 T. granulated sugar
  • 1 t. cinnamon

    Preheat oven to 400.

    Line muffin tins with cupcake papers

  • 3

    In large bowl mix dry ingredients (except topping)

  • 4

    In another bowl blend yogurt, applesauce, oil, eggs, and vanilla

  • 5

    Combine liquid ingredients with dry ingredients. Mix thoroughly but do not beat.

    Stir in blueberries (or raisins)

  • 7

    Fill tins 3/4 full. Sprinkle topping over each.

    Bake 20-25 minutes (20 min.) or until toothpick comes clean. Do not overcook – they dry out quickly. They freeze well for months.
