Southwestern Turkey Meatloaf
ingredients
- 2 lbs GROUND TURKEY
- 1 cup CORNMEAL
- 2 EGGS
- 1/4 cup of MILK
- 1 chopped RED ONION
- 1/2 cup chopped FRESH CILANTRO
- 1/2 cup chopped CARROTS
- 1 chopped GREEN PEPPER
- 2 finely chopped GARLIC CLOVES
- 1 tbsp CHILI POWDER
- 1 tbsp DRIED OREGANO
- 1 tbsp ground CUMIN
- 1 tsp SALT
- 1 14-oz can ROTEL or other tomato-based sauce

1. Preheat the oven to 350°F.

2. Beat the eggs, milk and salt into a large mixing bowl.

3. Combine gradually the rest of the ingredients (except for the Rotel or tomato-based sauce) and mix well.

4. Pack mixture into greased 9x6x3 inch pan and spread evenly the Rotel or tomato & green pepper sauce on top.

5. Bake covered for 1 hour or until cooked through.
