ingredients

  • 2 lbs GROUND TURKEY
  • 1 cup CORNMEAL
  • 2 EGGS
  • 1/4 cup of MILK
  • 1 chopped RED ONION
  • 1/2 cup chopped FRESH CILANTRO
  • 1/2 cup chopped CARROTS
  • 1 chopped GREEN PEPPER
  • 2 finely chopped GARLIC CLOVES
  • 1 tbsp CHILI POWDER
  • 1 tbsp DRIED OREGANO
  • 1 tbsp ground CUMIN
  • 1 tsp SALT
  • 1 14-oz can ROTEL or other tomato-based sauce

    1. Preheat the oven to 350°F.

    2. Beat the eggs, milk and salt into a large mixing bowl.

    3. Combine gradually the rest of the ingredients (except for the Rotel or tomato-based sauce) and mix well.

    4. Pack mixture into greased 9x6x3 inch pan and spread evenly the Rotel or tomato & green pepper sauce on top.

    5. Bake covered for 1 hour or until cooked through.
