Baked Macaroni and Cheese

ingredients
- 4 tablespoons butter
- 1/4 cup flour
- 1 cup milk
- 2 cups artisanal cheddar cheese, grated
- 1/4 teaspoon fresh nutmeg, grated
- 3/4 cup chorizo, diced
- 1/4 cup piquillo peppers, julienned (optional)
- 1/2 cup basil, chopped, loosely packed
- salt
- white pepper
- bread crumbs
- extra-virgin olive oil
- 8 ounces dried macaroni, cooked al dente

1. Preheat oven to 325.

2. Cook butter and flour in a large pot on very low heat to make it into a roux.

3. Add milk, simmer on medium-low heat for 10 to 15 minutes (mixture will be thick).

4. Add cheddar cheese, slowly, whisking to make sure it melts all the way through.

5. Add nutmeg, salt, white pepper, then fold in macaroni.

6. Remove pot from heat and add chorizo, basil, and peppers.

7. Place in 13x9-inch baking dish. Cover with bread crumbs and drizzle a little olive oil on top.

8. Bake in preheated 325 oven for 15 minutes or until done and top is golden brown.
