This goes together fast and always a hit! I double the recipe and freeze half for those days when nothing is going right and just want a quick dinner.

ingredients

  • 1 lb burger browned and drained
  • 1 diced onion
  • 1 can Rotel stewed tomatoes drained
  • 1 can black beans drained
  • 1/2 s bag of frozen sweet corn
  • 1 package fajita or taco mix
  • 1/2 t oregano
  • Garlic salt to taste.
  • cumin to taste
  • Sour cream
  • Shredded Colby/jack cheese
  • corn tortillas
  • Sliced black olives
  • Diced tomato, cilantro
  • Shredded lettuce

directions

    Brown and sauté 1/2 the onions. Drain off fat. Add rotel,beans, corn cumin, garlic salt, seasoning packet, and oregano. Stir together.

    Spray Casserole pan with oil, place a single layer of tortillas in pan and spray the top of the tortillas. Add a layer of hamburger mix, then sour cream, then cheese. Repeat and top off with black olives.

    Place in oven at 400 for 30

    Garnish with tomato,remainder of onion and cilantro
