not your usual bruschetta - this is a rich and cheesy variation

ingredients

  • 1/2 cup miracle whip or mayonnaise
  • 1 cup mozzarella cheese, grated
  • 2 tomatoes, seeded and finely diced (I usually add more)
  • 1/4 - 1/2 cup canned black olives, finely chopped
  • 1/4 cup fresh parmesan cheese, grated
  • 1 tsp. oregano
  • 1/4 tsp. sweet basil
  • 1/2 tsp. pepper
  • Baguette
  • Butter or margarine to butter baguette
  • 1 or 2 cloves of garlic, minced

directions

Combine first 8 ingredients in bowl and mix. Cut baguette, add garlic to butter and butter the top side of each baguette slice. Place onto a baking sheet. Spread mixture over bread slices. Bake at 350 degrees for 15 minutes or until cheese is melted.
