Quick Calypso Supper
Excellent and very pretty
ingredients
- 1 pkg (10oz) yellow rice (3C)
- 2 T olive oil w/garlic & red pepper added
- 1 C diced yellow pepper (1/2 pepper)
- 1 C diced onion (1/2 onion)
- 2 cans (16oz) black beans
- 2/3 C water

Saute onion & pepper in oil, add black beans and water, cook 6 minutes. Spoon over cooked rice and top with diced tomatoes and lime wedges.
