Salmon Patties
ingredients
- 1 cup of leftover mashed potatoes
- 2 Cans of salmon
- 1 egg
- 1 onion, finely chopped
- salt and pepper
- corn flake crumbs(can substitute panko)
- optional-milk or water to add to mixture if too dry
directions

Combine salmon with egg and onion. Add mashed potatoes to form patties, that are not too mushy and hold together. If they are too dry, add bit of water or milk.

Coat with corn flake crumbs or panko. Sauteed in pan with butter until nicely brown, turning once.

Serve with horseradish mayo.

Serve with peas and salad, with fruit for dessert
