Spinach and Pancetta Strata
Layered spinach mixture with eggs, cheese, and Italian bread
ingredients
- 2 tblsp olive oil
- 4 ounces pancetta (or bacon)
- 1 small onion, chopped
- 1 10-oz box frozen, thawed chopped spinach, squeezed dry
- 2 minced garlic cloves
- 1 tsp salt
- 1/2 tsp ground pepper
- 1/8 tsp nutmeg
- 1 loaf (1 pound) good Italian bread, cubed
- 1/2 cup grated parmesan cheese
- 3 cups whole milk
- 10 eggs

Heat oil in heavy skillet.

Add cubed pancetta and saute until crisp. remove from pan.

Add onion to pan drippings and saute until soft.(about 4 minutes)

Add spinach and garlic. Saute about 2 minutes.

Stir in half the salt & pepper, and all the nutmeg, and pancetta.

Butter a 3-quart baking dish.

Place half of bread in pan. Sprinkle with half of the cheese.

Repeat layering.

Whisk eggs and the rest of the salt and pepper.

Pour evenly over the strata.

Cover and chill 2-12 hours.

Bake in 350 degree oven, uncovered, for 35-40 minutes.

Let stand 5 minutes before serving.
