Grandma Lynne's Salad Nicoise
ingredients
- 5 med potatoes, cooked, drained, cooled
- 1/2 lb Fresh Green Beans, cooked, drained, cooled
- 2/3 cup Veg Oil
- 1/3 cup Wine vinegar
- 2 cloves Garlic, crushed
- 1 tbsp prepared mustard
- 1 tbsp chopped parsley
- 1/2 tsp instant minced onion
- 1 tsp salt
- 1/4 tsp pepper
- 1 red onion, cubed
- 1 small green pepper, cubed
- 6 ripe olives, halved
- 3 hard cooked eggs, shelled and sliced
- 2 oz. anchovy fillets, drained
- 2 medium sized heads of romaine lettuce
- 14 oz tuna, drained

1.Cut cooked potatoes into thin slices. Place in shallow dish. Place beans in 2nd dish

2.Combine oik, vinegar, garlic, mustard, parsley, onion, salt & pepper in jar. Shake well. Drizzle 1/2 cup over potatoes and 2 tablespoons over beans. Let stand 30 minutes.

3.Layer potatoes, beans, eggs, anchovies and romaine in large salad bowl. Break tuna into chunks. Arrange on top of everything and pour rest of dressing over. Toss lightly
