Spinach Artichoke Stuffed Chicken
ingredients
- 4 chicken breasts, flattened with meat hammer
- 1 pkg frozen chopped spinach, thawed
- 1 can quartered artichoke hearts, chopped
- 1 pkg crumbled feta
- 1 tbsp garlic/herb spreadable cheese
- 2 cloves garlic, chopped
- salt and pepper
- olive oil (coat the baking dish)
- balsamic vinegar (coat the baking dish)

1. Mix together everything but the chicken, spoon mixture down the center of the flattened chicken then roll and tie to secure

2. Put rolled chicken into baking dish and coat with olive oil and balsamic vinegar, season with salt and pepper

3. Bake at 400° 20-30 min

4. Can serve with “lemon rice”
