Spinach Artichoke Stuffed Chicken

ingredients

  • 4 chicken breasts, flattened with meat hammer
  • 1 pkg frozen chopped spinach, thawed
  • 1 can quartered artichoke hearts, chopped
  • 1 pkg crumbled feta
  • 1 tbsp garlic/herb spreadable cheese
  • 2 cloves garlic, chopped
  • salt and pepper
  • olive oil (coat the baking dish)
  • balsamic vinegar (coat the baking dish)

    1. Mix together everything but the chicken, spoon mixture down the center of the flattened chicken then roll and tie to secure

  • 2

    2. Put rolled chicken into baking dish and coat with olive oil and balsamic vinegar, season with salt and pepper

  • 3

    3. Bake at 400° 20-30 min

  • 4

    4. Can serve with “lemon rice”
