Caesar Dressing

Simply the best Caesar Dressing! This was given to me as a wedding present in 1965. It’s very garlicky but you can create and adjust. Enjoy! Di

ingredients

  • egg yolks...2 (coddled)
  • olive oil...1/2 pint
  • prepared mustard...1 1/2 oz.
  • Filet anchovies..1 tin
  • sm. stalk celery (chopped)
  • sm. onion (chopped)
  • garlic...2 cloves
  • black pepper..1/2 Tab.
  • salt...to taste
  • Tabasco vinegar...few drops
  • white wine vinegar..2 oz.
  • lemon..to taste
  • Parmesan cheese

directions

    Beat egg yolks and mustard together in a blender. Add olive oil very slowly as blending. If it gets too thick add a little wine vinegar.

    Grind together anchovies,celery, onion,garlic and pepper. Then add this mixture to the ingredients in the blender.

    Finally add salt, Tabasco and white wine vinegar. Blend.

    Taste and add lemon and a little Parmesan if desired.

    Serve on Romaine lettuce, with croutons and extra anchovies to taste. Add salt and pepper and top with freshly grated Parmesan cheese. Yummy!
