Ranch Potato Casserole
ingredients
- 6 - 8 medium potatoes
- 1/2 cup sour cream
- 1/2 cup ranch dressing
- 1/4 cup bacon bits or cooked crumbled bacon
- 1 cup shredded cheddar cheese
- TOPPING:
- 1/2 cup shredded cheddar cheese
- 2 cups slightly crushed cornflakes
- 1/4 cup melted margarine

Cook potatoes until tender; cube them and set aside. Combine sour cream, dressing, bacon and 1 cup of cheese. Place potatoes in a greased 9 x 13 pan. Pour sour cream mixture over potatoes. Top with 1/2 cup of cheese. Combine cornflakes with margarine. Sprinkle over potatoes. Bake at 350° for 40 - 45 minutes.
