Chicken with Asian Noodles
ingredients
- 1 tablespoon soy sauce & sesame oil
- 1 lb of boneless skinless chicken breast
- 3 tablespoons vegetable oil, divided
- 2 large shallots, thinly sliced
- 1 tablespoon finely chopped peeled ginger
- 1 3/4 cups reduced sodium beef broth
- 1 tablespoon fresh lime juice
- 1 red bell pepper, cut into 1/4 inch strips
- 1 bunch scallions, thinly sliced
- 3/4 lb dried Asian noodles
- 3 tablespoons of cornstarch

Soak noodles in cold water until tender, drain and set aside.

Toss sliced chicken and beef broth in 3 tablespoons of cornstarch and set aside. Heat vegetable oil in skillet on medium high heat and add chicken breast and cooked until browned. Add soy sauce, sesame oil, shallots, ginger, lime juice, red pepper and noodles, cook until peppers are tender and noodles are seasoned.
