Orzo Pasta Salad
ingredients
- 8 oz. orzo pasta
- 1/4 cup pine nuts
- 2 cups cherry tomatoes, quartered
- 1/2 cup crumbled feta
- 1 cup fresh basil, chopped
- Dressing
- 1 small clove garlic
- 3 Tbs. red wine vinegar
- 1 1/2 Tbs. lemon juice
- 1/2 tsp. honey
- 3/4 tsp. salt
- 1 tsp.pepper
- 1/3 cup olive oil

Cook orzo in boiling water until tender but still firm, about 8-10 minutes. drain and let col.

Toss pine nuts in a dry skillet over medium-high heat, shaking pan constantly until golden brown and fragrant, about 3 minutes.

Combine pasta, pine nuts, tomatoes, feta, and basil in a large bowl.

In a small bowl, mix together all dressing ingredients except olive oil. Drizzle in olive oil, whisking until combined. Add dressing to pasta mix, toss to coat.
