Chicken Marsala

ingredients

  • 3 Whole boneless chicken breasts
  • 1 egg beaten
  • 1/4c milk
  • 1/2c flour
  • 1/4tsp pepper
  • 3tbsp olive oil
  • 3tbsp butter
  • 1 small green pepper
  • 1 small onion chopped
  • 1/2lb small mushrooms sliced
  • 1/2tsp salt
  • 1 clove garlic
  • 1c marsala wine(dry,white)
  • 1 envelope instant chicken broth
  • 1 lemon cut into 6 thin slices

    Flatten chicken with mallet. combine egg and milk in dish. combine flour, salt, pepper. dip chicken peices into egg mixture, then into flour mixture. refrigerate for 2 hrs.

    Heat oil and butter, brown chicken on both sides, remove to platter. add wine and chicken broth to pan. Boil uncovered for 10 mins to reduce liquid.

    return chicken and vegetables to pan, take out of pan.
