Chicken Satay with Peanut Sauce
ingredients
- 1 lb boneless chicken breasts (2 in. pieces)
- Peanut oil (for brushing)
- Sesame seeds (for sprinkling)
- Red bell pepper strips (for garnish)
- Marinade
- 6 tbs olive oil
- 4 tbs light soy sauce
- 4 tbs fresh lime juice
- 1 inch piece of ginger peeled and chopped
- 3-4 garlic cloves
- 2 tbs packed brown sugar
- 1 tsp Chinese style chili sauce
- 2 tbs minced cilantro
- Peanut Sauce
- 2 tbs smooth peanut butter
- 2 tbs soy sauce
- 1 tbs olive oil
- 2 spring onions, finely chopped
- 1-2 tsp fresh lime juice
- 1 tbs packed brown sugar

Marinade: place all ingredients in a food processor and blend until smooth, scraping the sides of the bowl periodically. Pour into a shallow non-metallic bowl.

Peanut sauce: place all ingredients in a food processor and process until well blended. If the sauce is too thick add a little water. Cover and set aside until ready to serve.

Place the chicken and marinade in a ziplock and marinate for 4-8 hours in the refrigerator.

Thread two pieces of chicken on the end of each skewer and sprinkle sesame seeds. Brush the grill lightly with oil and grill on each side for 2-3 minutes per side or until the juices run clear. Serve hot or cold and garnish with red pepper strips.
