Lemon Pork (or Chicken)
This is a super easy dinner that looks like you have done a ton of work. It is very light and a staple in our house. I’ve made it for company and they think I’ve made something quite difficult. I usually serve it with a green salad and roasted asparagus.
ingredients
- 1 lb. thin cut boneless pork chops or thin cut boneless skinless chicken breasts
- 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 TBSP. olive oil
- 3/4 c. (6 oz) dry white wine
- 1/4 c. lemon juice
- 1/2 c. chicken broth
- 3 TBSP. butter
- 1 tsp. dried parsley
- 1 1/2 TBSP. capers
- 1 box long grain wild rice

Heat olive oil in a large sauté pan at medium heat. Mix together flour, salt and pepper. Then dredge chicken in the flour mixture. When oil is hot, place chicken in the pan and sauté on both sides to golden. Remove chicken from pan and keep warm.

Add wine, lemon juice and chicken broth to the pan and cook until heated. Add butter, parsley and capers and stir until butter melts.

Make rice according to package directions and serve chicken over the rice.
