Meatloaf with Tomato Gravy
ingredients
- 1/2 cup bread crumbs
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 2 tsp dried oregano
- salt & pepper
- 2 1/2 lbs ground beef
- 1/3 cup Parmesan
- 2 tsp Worcestershire sauce
- 2 eggs
- Sauce:
- 1/2 onion, chopped
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 Tbs olive oil
- 1 Tbs butter
- 3 Tbs tomato paste
- 1 bay leaf
- 1-15oz can chicken broth
- 1-15oz can crushed tomatoes
- 1/4 cup Parmesan
- 1 tsp red wine vinegar

Preheat oven to 350.
- 2
Sautee onion, garlic, oregano, salt and pepper in oil in hot skillet until soft. Combine with bread crumbs in large bowl.

Add beef, Parmesan, Worcestershire sauce and eggs. Mix well.

Form into loaf and place in greased loaf pan.

Bake for 40 minutes, uncovered.

Sauce:

Sautee onion, garlic, and oregano in oil and butter.

Add in tomato paste and bay leaf. Stir until all well combined.

Add in broth and tomatoes. Bring to a boil and let simmer 5 minutes.

Whisk in Parmesan, vinegar, salt and pepper. Serve over meatloaf.
