Cheese Stuffed Pork Roast

ingredients

  • 1 tbs flour
  • 1/4 tsp lemon pepper seasoning
  • 2 tbs butter
  • 2 tbs heavy whipping cream
  • 1 cup shredded Swiss cheese
  • 2 boneless pork tenderloins OR 1 pork roast
  • 6 slices thin deli ham
  • 1 tsp paprika
  • 1/2 tsp each: marjoram, oregano and basil
  • Cream Sauce
  • 1 small onion finely diced
  • 1 tbs butter
  • 1 tbs cornstarch
  • 1 cup heavy whipping cream
  • 1/4 cup chicken broth
  • 1 tsp sour cream
  • Salt/pepper to taste

    Combine flour, lemon pepper, butter and cream - mix until smooth, add Swiss cheese and set aside. Then slice the roast down the center to within 1/2 inch of the bottom. Cover the roast with plastic wrap and flatten to 3/4 inch thickness. Remove plastic and line the pork with the ham, then spread the cheese mixture on top of the ham along one side. Roll roast jelly roll style (the sides will just meet) and secure with kitchen string. Use toothpicks on the ends if needed.

    Combine the paprika, marjoram, oregano and basil then rub the mixture of the pork. Place in a shallow roasting pan and back at 325 for 1 1/4 to 1 1/2 hours or until pork reaches 160° then let stand 10 minutes before slicing.

    For the sauce: saute onion in butter until tender, stir in cornstarch. Blend in the cream and broth and bring to a boil and stir for 2 minutes or until thickened. Remove from heat and stir in sour cream and then salt to taste. Serve over sliced pork.

    I add extra chicken broth, sour cream and cornstarch to increase the sauce
