Italian Sausage & Tortellini Soup
ingredients
- 1 lb ITALIAN SAUSAGE
- 1 cup chopped ONION
- 2 minced GARLIC CLOVES
- 6 cups BEEF BROTH
- 1/2 cup RED COOKING WINE
- 2 14-oz cans CHOPPED TOMATOES
- 2 sliced LARGE CARROTS
- 1 tbsp DRIED BASIL
- 1 tbsp DRIED OREGANO
- 1 tbsp SALT
- 1 tbsp ground BLACK PEPPER
- 1 8-oz can TOMATO PASTE
- 2 cups sliced ZUCCHINI
- 8 oz fresh TORTELLINI PASTA
- 3 tbsp chopped FRESH PARSLEY
- Crumbled PARMESAN CHEESE for serving

1. In a 5 quart Dutch oven, brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings

2. Saute onions and garlic in drippings with the salt, black pepper.

3. Stir in beef broth, wine, tomatoes, carrots, basil, oregano, tomato paste, and sausage.

3. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.

4. Skim fat from the soup. Stir in zucchini and parsley. Simmer covered for 30 minutes.

5. Add tortellini during the last 10 minutes.

6. Sprinkle with Parmesan cheese on top of each serving.
