Zucchini and Tomato Gratin

ingredients

  • 3 medium zucchini
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh parsley
  • 1 minced garlic clove
  • 1/2 tsp fresh thyme
  • 1/4 tsp rosemary
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 can (14.5 ounces) petite diced tomatoes
  • 2 tbsp bread crumbs
  • 2 tbsp shredded parmesan cheese

directions

Cut zucchini into 1/4 inch slices. Toss with remaining ingredients except bread crumbs and cheese. Place in baking dish, cover with foil and cook for 30 minutes at 400 degrees. Remove foil and sprinkle with bread crumbs and cheese and bake uncovered for another 20 minutes.
