Cajun Red Beans and Rice
ingredients
- 2 Tbls. olive oil
- 1/2. lb sausage, chopped
- 1 c. chopped onion, bell pepper and celery
- 1 1/2 tsp. Cajun seasoning
- 3/4 tsp salt
- 1/2 tsp. oregano
- 2 cloves garlic, minced
- 1 (15 oz) can red beans, rinsed and drained
- 1/4 c. water
- 1 (14.5 oz) can diced tomatoes
- 1/4 tsp. pepper
- 4 c. hot cooked rice

1. Heat oil in large nonstick skillet over medium-high heat. Add sausage and onion mixture to pan; saute 4 minutes. Add Cajun seasoning, salt, oregano and garlic to pan; cook 1 minute,, stirring constantly.

2. Add beans, water and tomatoes to pan; bring to a boil. Reduce heat, simmer 10 minutes or until thickened. Remove from heat; stir in pepper. Serve over rice.
