Mocha Phyllo Cups
This is a delicious dessert - and everyone will be impressed, even though it’s really simple to make.
ingredients
- 3 cups milk
- 1 (1.4oz) sugar-free,fat-free chocolate instant pudding mix
- 1 Tbs instant espresso
- 3 sheets refrigerated phyllo dough
- 3/4 tsp cinnamon
- Cool Whip
- cocoa powder

Preheat oven to 400.

Whisk together milk, pudding mix, and espresso powder. Refrigerate until set.

Unroll phyllo dough sheets. One at a time, spray with cooking spray and sprinkle with 1/4tsp cinnamon. (While not using, keep other sheets covered with damp towel so they don’t dry out.)

Layer remaining sheets on top, one at a time, applying cooking spray and cinnamon to each.

With a pizza cutter, cut sheets into 8 rectangles.

Fit each rectangle into a greased muffin cup. Bake for 8-10 minutes, until crispy. Remove from pan and let cool.

Pour pudding into each cup and dollop with Cool Whip. Sprinkle top with cocoa powder.
