Spinach White Bean Dip
ingredients
- 2 Tbs olive oil
- 2 garlic cloves, minced
- 2 (6oz) bags baby spinach
- 1 can cannelini beans
- 1 tsp lemon juice
- 1 Tbs balsamic vinegar
- salt & pepper
- pita chips

Heat 1 Tbs olive oil in skillet. Cook garlic 1 minute.

Add in spinach, 1 bag at a time, and cook until wilted. Let cool.

In a food processor, blend remaining olive oil, spinach mixture, beans, lemon juice, vinegar and salt and pepper.

Serve with pita or tortilla chips.
