Avocado Corn Salsa
ingredients
- 1 medium chopped red pepper
- 1 medium chopped red onion
- 3-4 minced garlic gloves
- 1- 4 1/2 oz can of chopped black olives
- 1- 16 oz pkg. of corn, thawed and drained (or canned corn)
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/3 cup of olive oil
- 1/4 cup of fresh lemon juice
- 2 Tbs. apple cider vinegar
- 2 chopped ripe avocados
directions
Combine ingredients except avocados, cover and refrigerate overnight. Add avocados just before serving; serve with taco chips
