Avocado Corn Salsa

ingredients

  • 1 medium chopped red pepper
  • 1 medium chopped red onion
  • 3-4 minced garlic gloves
  • 1- 4 1/2 oz can of chopped black olives
  • 1- 16 oz pkg. of corn, thawed and drained (or canned corn)
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup of olive oil
  • 1/4 cup of fresh lemon juice
  • 2 Tbs. apple cider vinegar
  • 2 chopped ripe avocados

directions

Combine ingredients except avocados, cover and refrigerate overnight. Add avocados just before serving; serve with taco chips
