Black Bean Chili
If you are on Weight Watchers, this is a very low point and delicious chili.
ingredients
- 4 tsp. olive oil (or less)
- 2 onions, chopped
- 1 carrot, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 5-6 cloves garlic, minced
- 1 can green chili peppers, chopped
- 1/2 tsp. crushed red pepper flakes (or less)
- 1 1/2 tsp. ground cumin
- 1 tsp. dried oregano
- 1/4 tsp. ground cloves
- 1 tsp. chili powder
- 3 cans black beans, drained
- 1 (14 1/2 oz.) can diced tomatoes
- 1 can vegetable broth (or chicken broth)
- Top with chopped cilantro and fat-free sour cream.

In large saucepan, heat olive oil. Saute the onions, carrot, bell pepper, celery, and garlic until wilted, about 10 minutes. Add other ingredients, stir and simmer for about one hour.

Makes 8 cups. Each cup (without sour cream) has approximately 2 points.
