Mashed Maple Sweet Potatoes
ingredients
- 3 lbs sweet potatoes, peeled and cut up
- 1/4 tsp salt
- 2 tbsp maple syrup
- 1/2 tsp salt
- 2 tbsp butter, cut into pieces
- 1/4 coarsely chopped pecans, toasted

1. Place sweet potatoes in a large saucepan. Add water to cover and the 1/4 tsp salt. Bring to boiling; reduce heat. Cover and simmer for 25 to 30 minutes or until tender. Drain well and return sweet potatoes to saucepan.

2. Use a potato masher to mash potatoes in saucepan. Stir in maple syrup and the 1/2 tsp salt. Transfer to serving dish. Top with butter and pecans. Serve warm.
