Chicken & Parmesan Polenta with Peppers & Onions
ingredients
- Chicken:
- Whole cut up chicken - clean and dried
- 4 tbsp. butter
- Fresh chopped oregano
- 3 cloves of chopped garlic
- 1 tsp. paprika
- 1 tsp. salt
- 1 tsp. pepper
- 1 chopped green bell pepper
- 1 chopped red bell pepper
- 1 chopped onion
- Polenta:
- 2 oz. finely shredded parmesan cheese
- 4 C. water
- 1/2 tsp. salt
- 1 C. yellow cornmeal
- 1/4 tsp. butter

For the chicken: Preheat oven to 350 degrees. Place chicken in 9 x 13 baking dish. Melt butter and add pressed garlic. Pour all over the chicken. Season with salt, pepper and paprika. Top with fresh oregano. Cover with foil and bake 35 minutes. Remove the chicken from pan and save the drippings. While the chicken has about 20 minutes left to cook, sauté the onion and garlic in olive oil.

Polenta: Grease a large dinner dish or pie plate. In a pan, heat water and salt to a boil. With a wire whisk, gradually stir in cornmeal. Reduce heat to low. Cook for 20 minutes stirring often. Stir in 1/4 cup of the cheese and cook for 5 minutes more or until thick. Pour into the greased pan and let it firm up while chicken is finishing up. Serve chicken, polenta topped with peppers and onions and spoon a bit of the drippings atop everything.
