Fruit Crepes

This makes a wonderful healthy breakfast. Our family even likes to make it our evening meal along with bacon. The brightly colored fruits make this dish is as beautiful as it is tasty

ingredients

  • 1 1/2 cups of wheat flour
  • 1 tablespoon of Splenda
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of baking powder
  • 2 tablespoons of butter melted
  • 2 large eggs
  • 2 cups of milk
  • 1/2 teaspoon vanilla
  • 1 teaspoon fresh squeezed orange juice
  • Butter for cooking each crepe
  • 2 cups of washed blueberries
  • 2 cups of washed and sliced strawberries
  • 2 tablespoons of Splenda
  • Cream Cheese spread:
  • 1 huge scoop vanilla ice cream (light)
  • 1 teaspoon vanilla
  • 1 8 oz. package light cream cheese
  • 1 teaspoon of freshly squeezed orange juice
  • 1 teaspoon sugar or Splenda

    Mix all ingredients for crepes except butter. Lightly butter 6 to 8 inch skillet and heat over medium heat until bubbly. Pour 1/4 cup of batter into skillet and rotate pan so that batter spreads thin. Cook until light brown. Continue until batter is gone.

    Make Cream Cheese spread

    Mix fruit together and sprinkle Splenda on top.

    Place crepe onto plate and spoon cream cheese spread down the middle. Add fruit mixture and roll up crepe. Drizzle more cream cheese spread over top. Serve immediately.
