Red Velvet Black & White Cookies

ingredients

  • 1 1/4 c flour
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 c granulated sugar
  • 1 stick (4-oz) unsalted butter, at room temperature
  • 1 large egg
  • 1 tbsp red food coloring
  • 1 1/2 tsp pure vanilla extract
  • 1 tbsp corn syrup
  • 1/2 c buttermilk
  • 2 c confectioners sugar
  • 4-oz semisweet chocolate

directions

Preheat oven to 350 degrees. Line baking sheet with parchment paper. In medium bowl, sift together flour, cocoa, baking soda and salt. Using mixer, beat 5 tablespoons of butter with granulated sugar until fluffy, 3 minutes. Beat in egg, food coloring and 1 teaspoon vanilla. Beat in flour mixture alternately with buttermilk until smooth. Place 1/4 cup scoops of batter 2 inches apart on prepared baking sheet; make sure to spread out. Bake until toothpick inserted in center comes out dry, 12 to 15 minutes. Let cookies sit 5 minutes then transfer to rack. In a bowl, whisk together confectioners sugar, remaining 1/2 teaspoon of vanilla, 1 tablespoon corn syrup and 2 tablespoons of hot water until smooth. In another bowl, combine chocolate, remaining 3 tablespoons butter and 1 tablespoon corn syrup; microwave until melted, about 1 minute. Coat cookies with vanilla then chocolate icing. Refrigerate until set, about 20 minutes.
