Ahi Tuna with Cirtus-Sesame Vinagrette
ingredients
- 1/4 c. plus 1/2 tbl. OJ
- 3/4 tsp. lemon juice
- 3/4 tsp. sesame oil
- 3/4 tsp. honey
- 1/8 tsp. dijon mustard
- 1/8 tsp. chili paste (sambal) - or other hot sauce
- 3/4 tsp. rice wine vinegar
- 1/4 c. plus 1 tbl. vegetable oil
- 1 and 1/8 tsp. sesame seeds
- 2 tuna steaks
- 1 package mixed greens

Combine OJ, lemon juice, sesame oil, honey, mustard, sambal and rice wine vinegar in a medium bowl.

Blend in the veg. oil w/ hand blender, slowly til emulsified. While blending, also stir in the sesame seeds; crunching them w/ the blender provides the vinaigrette w/ a nice texture. Reserve.

Heavily season both sides of the tuna w/ salt and pepper.

Heat a saute pan over high heat; when at temperature, add veg oil and tuna steaks. Sear tuna for 1 min. per side.

With a sharp knife, slice tuna. Mix greens w/ most of vinaigrette, reserving a small amount. Arrange tuna slices over salad, ladle remaining vinaigrette over the tuna, and serve.
