Microwave Chocolate Pudding
ingredients
- 2/3 cup granulated sugar
- 1/4 cup unsweetened cocoa
- 3 tbsp cornstarch
- 1/4 tsp salt
- 2 1/4 cups milk
- 2 tbsp butter
- 1 tbsp vanilla
directions
Combine sugar, cornstarch, cocoa and salt in a medium size glass bowl. Gradually whisk in the milk. Microwave on high for 2 1/2 minutes. (I usually cover with wax paper as it can splatter) Whisk and microwave again on high for 2 1/2 minutes. Stir again and microwave again for another 1-2 minutes until cooked and thickened. Stir in the butter and vanilla. Pour into individual serving dishes and press plastic wrap directly on the surface so a skin doesn’t form. Chill and enjoy with whipped cream and even good with bananas or strawberries. Yum.
notes
If you double the recipe the cooking times are longer. Adjust accordingly the times don't exactly double.
