Chicken with Marinara Sauce

  • 6 skinned and boneless chicken breast halves
  • 1 cup fine, dry breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh oregano
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 3 tbsp. olive oil
  • Marinara Sauce
  • 2 cups shredded mozzarella cheese

    Place chicken between two sheets of heavy-duty plastic wrap. Flatten to 1/4 inch thickness, using a meat mallet or rolling pin.

    Combing breadcrumbs and next 5 ingredients. Dredge chicken in flour; dip in egg, and coat with breadcrumb mixture.

    Brown chicken in hot oil in a skillet over medium heat. Remove from the skillet and place in a lightly greased baking dish. Spoon Marinara Sauce over chicken and top with mozzarella cheese. Bake at 400 ° for 8 minutes or until cheese melts.
