Basil Tomato Grilled Cheese
ingredients
- 24 slices Italian bread (3/4" thick)
- 12 slices mozzarella cheese (or two each?)
- 6 large tomatoes sliced
- 6 T. minced fresh basil
- 6 t. balsamic vinegar
- salt and pepper to taste
- 3/4 c. olive oil
- 9 T. grated parmesan cheese
- 3/4 t. garlic powder
directions
On half the slices of bread, layer cheese and tomatoes, sprinkle with basil, vinegar, salt and pepper. Top with remaining bread. In a small bowl, combine the oil, parmesan cheese and garlic powder, brush over the outsides of each sandwich. On a griddle, cook sandwiches over medium heat until golden brown on both sides.
