Oatmeal Cookies
ingredients
- 2 sticks (1/2 lb.) softened butter
- 3/4 cup brown sugar, packed
- 2 teaspoons vanilla
- 1/2 cup sugar
- 2 eggs
- 3 cups oats
- 1 1/2 cups wheat flour
- 1 teaspoon baking soda
- sprinkles of ground nutmeg, salt & cinnamon
- (optional - 1 cups chopped pecans)
directions
Pre-heat the oven to 350° F. Beat butter, brown sugar, sugar and vanilla in a large bowl for about a minute until light and fluffy. Add eggs. Next, add oats, flour, baking soda, cinnamon, salt and nutmeg. Mix on low speed until blended. Add nuts, if using, and mix on medium speed. Drop batter by the tablespoon onto non-stick baking sheets. Bake until gold brown, about 7 - 10 minutes. Let cool for a few minutes until placing onto waxed paper. ENJOY!
