Fresh Corn Salad
ingredients
- 8 ears corn
- 3/4 cup diced red onion
- 5 T cider vinegar
- 5 T olive oil
- 3/4 tsp kosher salt
- black pepper
- 3/4 cup thinly sliced basil leaves
- 1 avocado, diced
directions
Cook corn 3 minutes in boiling water. Immerse in ice water. Cut off kernels. Toss with rest of ingredients and add basil. Add avocado when ready to serve.
