Mashed Potatoes

ingredients
- 5 lbs cooked potatoes
- 2 tsp. salt
- 1/2 cup butter or margarine
- 1/8 tsp. pepper
- 2 3oz. packages cream cheese
- 1 cup milk (or more)
- 2 tsp. chopped chives

Mash potatoes until smooth. Add butter, cream cheese, chives salt and pepper. Mix until smooth. Gradually add enough milk to make potatoes creamy and fluffy, mixing well after each addition.

Spread potatoes in greased 8" square baking dish. Dot butter and sprinkle with paprika. Bake in 350° oven for 45 minutes or until hot.

*may also refrigerate in a tightly covered container for up to 2 weeks.
