Italian treats covered with chocolate

ingredients

  • 3 eggs
  • 1 c sugar
  • 1/2 c vegetable oil
  • 3 1/3 c flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/4 c nuts
  • 1 pkg semi-sweet chocolate pieces

Prepare biscotti dough

  • 1

    Preheat oven to 350 degrees. Beat eggs very well. Add sugar and beat together. Add oil and beat further.

    Add flour, baking soda, salt, vanilla, and nuts. Mix well. Dough will be very, very sticky.

Bake biscotti

    Spray Pam onto cookie sheet. Pour dough onto cookie sheet, forming into 3 loaves. The loaves will spread--this is normal.

    Bake for 30 to 40 minutes, until golden brown. While warm, slice each loaf about 1 inch thick. If cool, the loaves will be brittle.

Broil, then cover in chocolate

    Lay slices on their sides and broil until brown on each side. Do not put on top rack. Keep a close eye on this as it takes only a matter of seconds.

    Melt chocolate in double boiler and spread on biscotti with pastry brush.

I got this recipe from Lauraleen while I was staying with her when she was recovering from surgery. I tweaked her recipe to add the chocolate and nuts and it is delectable!
