Crisp & Golden Potato Latkes

  • Peel and cube potatoes and place in bowl of cold water. Drain and place in food processor with onions with knife blade. Pulse till smooth, drain immediately. Pour into bowl. Stir in eggs and flour or meal, 1 Tbsp at a time. Season with salt and pepper. Pour oil into deep pan and heat over medium-high heat. Drop spoonfuls of potato mix into oil, flatten slightly and fry till golden brown. Drain on paper towel.
