Mom's Roasted Shrimp with Feta
ingredients
- good olive oil
- 1 1/2 cups diced fennel
- 1 T minced garlic (3 cloves)
- 1/4 cup white wine
- 1 can diced tomatoes, drained
- 2 t tomato paste
- 1 t oregano
- salt and pepper
- 1 pound shrimp, peeled and deveined
- 3 oz. greek feta chees
- 1 cup bread crumbs
- 3 T parsley
- 1 t lemon zest
- 2 lemons

Preheat oven to 400 degrees.

Heat 2 T of olive oil in pan over medium heat. Add the fennel and garlic and saute for 10 minutes, until tender. Add the wine and bring to a boil, cook until reduced by half, 3 minutes.

Add the tomatoes, tomato paste, oregano, 1 t salt, 1/2 t pepper to the skillet. Simmer over low heat, 15 minutes.

Arrange the shrimp over the tomato mixture in the skillet. Scatter the feta evenly over the shrimp. In a small bowl combine the bread crumbs, parsley, lemon zest and 2 T of olive oil and sprinkle over the shrimp.

Bake the shrimp for 15 minutes, until the shrimp are cooked and breadcrumbs are brown. Squeeze juice of 1 lemon over the shrimp.
