Mom's Chinese Chicken Salad
ingredients
- 4 chicken breasts cooked
- 2 cups chinese cabbage (bok choy)
- 6 green onions sliced
- 1 sweet red pepper sliced
- chinese noodles (saba) or angel hair pasta (3 oz.)
- 1/4 salad oil
- 3 T white wine vinegar
- 2 T soy sauce
- 1 T sesame oil
- 1 T sugar
- 1 t dry mustard
- 1 t ginger root (fresh)
- 1 garlic clove chopped
- 1 T sesame seeds toasted
- parsley for garnish

In a large bowl, combine the chicken, cabbage, onions and red pepper. Cover and chill while cooking noodles and preparing the dressing.

Whisk dressing ingredients (salad oil through garlic) in a small bowl. Pour over chilled chicken and vegetables and mix thoroughly. Add noodles and mix again. Transfer to a large bowl and garnish with sesame seeds and parsley.
