Yams for Thanksgiving
ingredients
- 4 large cans of yams, drain and save the liquid (you may need it)
- Add about 1 cup of orange juice or the juice from a pineapple can
- Add one cube of butter
- Add 1/2 box of brown sugar
- Add about 1 Tbs of cinnamon or nutmeg
- Add about 3 Tbs. vanilla
- Marshmallows

I pass the yams through the sieve/mash potato pusher or you can mash them by hand and use an egg beater like you use for mashed potatoes.

Put the yams in a pot on the stove on low (you are just heating them up).

Add all other ingredients except the juice.

Keep on stove until all is melted.

If you had not passed the yams through the sieve then mash them now.

If they are too dry, and they will be while you are cooking them, add the juice a little at a time.

They are to be creamy, but firm.

Put them in the casserole dish and cook at 350 for about 1 hour.

Take them out and put the marshmallows on top and into the broiler. Careful, they will burn quickly. If they do no have the marshmallows use the one in the jar that is already creamed.
