Bridget's Favorite Chicken with Goat Cheese

ingredients

  • 6 boneless skin-on Chicken Breasts
  • 8-10 oz. Garlic & Herb Goat Cheese or Boursin or (in a pinch you can substitute Cream Cheese mixed with Lemon Pepper & Garlic Salt)
  • 6 large Fresh Basil Leaves or sprigs of Thyme
  • Good Olive Oil
  • Kosher Salt
  • Freshly Ground Pepper

    Pre-heat oven to 375.

  • 2

    Loosen skin from chicken breasts to create a pocket. Place approximately 2 tablespoons cheese under skin in pocket. Place Basil leaf between cheese and skin so you can see it through the skin. Rub outside with olive oil. Season with Salt and Pepper. Bake on rimmed baking sheet at 375 for 35 minutes or until golden brown.
