White Bean & Chicken Chili
ingredients
- 1/2 lb bacon, finely diced
- 1/2 cup olive oil
- 1 cup finely diced onions
- 1/4 cup garlic, minced
- 2 lbs skinless, boneless chicken, cubed
- 1 tbsp salt
- 2 tbsp white pepper or to taste
- 1 cup flour
- 2 cups chicken stock
- 1 quart cream
- 1/4 cup minced jalapeno peppers
- 3 cups cannelini beans, rinsed

Render the fat from the bacon in a large pot. Add in the olive oil, onions, garlic and chicken. Cook until the chicken is just about cooked through. Add the salt, pepper and flour, stirring often, for about 10 minutes.

Stir in the chicken stock and then the cream and jalapeno peppers. simmer for 10 to 15 minutes. Add in the beans. Thicken with a little cornstarch and water mixture, if chili is too thin. Adjust seasonings.
