Meringue Crust
ingredients
- 1/2 Tsp Veg Oil
- 1 TBS all purpose flour
- Crust:
- 3 Extra Large Egg Whites
- 1/8 Tsp Cream of Tartar
- 1/2 C. Superfine Sugar
- 1 Tsp Vanilla

Preheat oven to 275. Rub bottom and sides of 9" pie pan with oil. Dust with flour and tap out excess flour.

Prepare crust:

Beat egg whites in a large bowl with electric mixer on high speed until silvery. Add cream of tartar, beat at highest speed until soft peaks form. Beat in sugar gradually, then vanilla. Beat until stiff and glossy about 3 minutes. Spread meringue over bottom and sides of pie plate, forming a shell.

Bake at 275 for 1 hour. Turn oven off, leave in oven with doors closed for 2 hrs more or until dry and crispy.
