Grandma Bessy's Chocolate Cookies
This recipe was started by my Great Grandma Bessy. Now, my Grandma Suzan makes it for birthdays. Originally it was a cake, not it is cookies!
ingredients
Cookies- 2 cups sugar
- 3 large eggs
- 1 1/4 cups oil
- 4 tsp vanilla
- 1 1/3 boiling water
- 1 cup unsweetened cocoa
- 1 1/3 tsp baking soda
- 1 1/3 tsp baking powder
- 2/3 tsp salt
- 1 pint heavy whipping cream
- 1 bag chocolate chips

Preheat oven to 350 degrees. Grease a cookie sheet; set aside. In large mixing bowl, beat sugar and eggs until creamy. Blend in oil and vanilla and beat for 2 minutes.

Combine boiling water and cocoa; add to egg mixture and blend thoroughly. Stir in baking powder and salt. Add flour and beat until mixture is thoroughly blended and smooth.

Pour onto prepared cookie sheet and bake 25-30 minutes. Let cookies cool completely and then frost.
Frosting

Take package of chocolate chips and melt in the microwave or in a double boiler.

Make whipping cream out of a pint of heavy whipping cream. I use the blender and make it quite stiff.

Blend the whipping cream and chocolate chips together. Frost cookies and enjoy!
